The episode title is a play on the phrase 'haut cuisine'. This French phrase literally means high cooking, but over time has taken on the idiomatic meaning of high-class cooking; cooking for people who understand and value the art.

Cultural References
Alton's lawyers, Itchy and Twitchy, may owe their names to two minor characters in The Simpsons, an extremely violent cat and mouse pair (the cat usually comes off worse) named Itchy and Scratchy.
Analysis
In some ways this is the show the original Oat Cuisine should have been. It offers a breakfast food, a bread, a refreshing beverage, and a sweet all made from rolled oats, and revealing the versatility of just one form of the cereal. The original Oat Cuisine offered, among other recipes, haggis - something extremely unlikely to appeal to many diners who aren't from Scotland.
