Good Eats: Crustacean Nation III: Feeling Crabby

When Alton's live crab escapes before it can meet its fate, he's forced to turn to frozen alternatives. But live or frozen, stone, blue, or Dungeness - however you, um, pick it, crab is Good Eats. Alton shows how to get the most from crab - how to select it, what the terms mean, and how to prepare it, with examples like Steamed Alaskan King Crab Claws, a clarified butter called Ghee, Crab Cakes (or Fritters) and finally a Marinated Crab Salad.

Alton starts this episode as he has others - in the Food Gallery. This eclectic museum of culinary horror is an homage to Rod Serling's television series Night Gallery. Each episode of Night Gallery began in a museum, and one of the exhibits framed the episode.

Calling himself a culinary Quincy, Alton compares his crab dissection technique to that of Jack Klugman's Dr. R. Quincy, the central character of NBC's Quincy, M.E., a popular forensic procedural that is the spiritual ancestor of the CSI franchise and many similar shows.

As Alton displays the hooked probe he uses to remove meat from crabs, he reminds us of Dr. Christian Szell, the sinister Nazi dentist from the film Marathon Man who used dental instruments to torture the hapless Thomas Levy, asking him repeatedly, "Is it safe?" This quote has appeared in at least one other Good Eats episode.
