Good Eats: I Pie

Limp crust...watery custard...weepy meringue. These things make pie Bad Eats. Starting with a little help from the King, sort of, Alton first finds out just what a lemon meringue pie is, and isn't. Then he brings some technique to pie making. That, quality ingredients and good tools will help viewers turn out pies that are consistently Good Eats, such as Alton's Lemon Meringue Pie that starts as a blind-baked Pie Crust.

Recap

Alton visits a diner whose patrons are gobbling down pies of every sort. Apparently the place is famous for its pie. So why is Alton unhappy with his slice of lemon meringue? The crust is limp, the meringue is weeping and a layer of water between meringue and custard practically guarantees the pie will disintegrate on the fork. Alton’s determined to build a pie lacking these unwholesome qualities. The key is smart tools, thoughtful ingredients, and tasty science. Used together these will create a pie that looks and tastes like... Good Eats...

The episode title I Pie is a play in I Spy (US), a popular spy series from the 1960s, later made into a theatrical release.

Alton likes his meringue "smooth as Kojak's noggin." Kojak was the eponymous bald headed detective portrayed by Telly Savalas in the 1970's classic detective drama Kojak (1973).

Commenting on a soggy pie crust (a problem he solves with blind baking), Alton notes that "limp biscuit" isn't just a band any more. He's really talking about metal band Limp Bizkit. Popular at the time the episode was recorded, the band has floundered critically in recent years.
