Good Eats: Your Pad or Mine (Thai)

Alton’s ready for a trip to Thailand when the “first choice” becomes available and Alton’s shunted aside. To console himself, he finds the ingredients and builds himself a plate of Pad Thai, a dish made popular during the rice shortages of World War II. Some of the ingredients are unusual in American cuisine, but Alton finds them - and offers tips on how viewers can, too, along with stir fry techniques.

Episode Notes
Cards
  • They say that in Thailand there is a different pad thai recipe for every cook.
  • In Thailand, new woks are traditionally seasoned with pork fat.
  • The earliest woks were made of clay and date to the Hans Dynasty (206BC – 220AD).
  • The Thai food philosophy can be summed up in two words: arroy meaning “delicious” and sanuk meaning “fun.”

Your Pad or Mine
The episode title is a pun based on the fact that pad is an English and a Thai word. In English it's slang for a dwelling, so the title means "Your place or mine?," a common pickup line.

Episode Quotes
Alton: Now, if you’re thinking this might have a pungent aroma… (sniffs fish sauce and makes a face) …by golly, you’d be right! Luckily the fragrance… (grimaces) …mellows a little bit when cooked.

Alton: (about fish sauce) No MSG is necessary, and neither are preservatives. Believe me... bacteria? Don't want a piece of this action!

Cultural References
The line “big ol’ jet airliner” from the introduction refers to the song Jet Airliner by the Steve Miller Band, about a man who knows he must leave home but wishes he did not have to.
