At the Vargas Culinary Institute, owner David Lampard meets with a group of French mobsters. Langdon refuse to pay more than $12,000 a kilo to the head man, Jean-Luc, just as the head chef Toby Heath comes in and complains. As the mobsters leave, Lampard has his man Rampone knock Toby out and tell him that he's dismissed.
Later, Toby comes to see Eliot and Nate and explains that he trains children from troubled homes because they can't get regular training. Lampard is only interested in getting rich students so they can become celebrity chefs. Toby explains that he figures Lampard is doing drugs. Nate calls Eliot to the side and says that he thinks it's a matter for the police. However, Eliot explains that Toby trained him how to cook when he got out of the service, giving him an option other than wetwork. Now Eliot wants Nate to understand why he's going to help him.
In the conference room, Alec notices that Parker is feeling down. However, Eliot arrives with his delivery and Alec runs off to get it. He comes back with his new ion capacitator and Nate says that Sophie is at the theater. Alec begins the briefing and explains that Lampard went into investing and offers bargain loans. If they can't pay, he takes them for everything they've got. Lampard has taken three trips to France in the last three months and spent all of his time under bridges and under back alleys. They figure that Lampard is buying drugs wholesale and shipping them to the U.S. Nate figures that Lampard is hiding the money with his regular cash. He calls Sophie, who is in the middle of an acting exercise, and she irritably tells the class to take five while she leaves.
At the culinary school, Sophie tries to recruit one of Lampard's training cooks, saying that she's recruiting for a stripper-based TV cooking show. Once the training cook is out, Alec joins one of the classes while Eliot takes over as the new instructor and starts lecturing them about what cooking really means. He notices one student texting her husband and tosses her phone in a water pot. Meanwhile, Parker and Nate listen in and he notices that something is wrong with her. She says that everything is fine, including her and Alec, but Nate asks what's really going on. Parker finally admits that she doesn't have a thing and Nate isn't sure how to deal with it. He checks back with Eliot, who reports that he didn't find any drugs. Alec is playing with the lasers and Eliot tells him to make a sweep.
As the two teammates look through the kitchens, Eliot checks a freezer and Rampone arrives to tell him it's off-limits. He then takes Eliot to Lampard, who wants an executive chef for his new restaurant. He insists that he likes Eliot's sizzle and his ninja vibe. When Eliot says his students aren't ready to put food out, Lampard insists that the point is to make them celebrity chefs. Meanwhile, Rampone checks the freezer and discovers that it's malfunctioning, unaware that Alec has sabotaged it. Rampone comes back and tells Lampard that Jean-Luc is back. As Jean-Luc walks past, Eliot gets a whiff of a familiar odor. He tells Nate that Lampard is dealing something much bigger: truffles.
Back at base, Eliot explains that black winter truffles are the cocaine of the food world and generate exorbitant profits. Lampard is selling them to other cooks and splitting the profits with Jean-Luc. They figure that the truffles are in the freezer and Nate asks Sophie if her students can handle their new con. Sophie assures him that they can.
Eliot goes to the restaurant and explains to Parker that he's turning it into a gastropub. She asks him to teach her how to like stuff but he says he doesn't have time.
At the school, Alec is busy making edible paper with a laser printer and demonstrating his technique to the other students. As he makes a citrus wine complement with a laser, Nate comes in and looks around briefly. When Rampone comes in, Alec tells him that Nate looked shifty and Rampone goes off after him. Meanwhile, Nate looks around the kitchen and plants a bug. Lampard spots Nate and asks what he's doing just as Rampone comes in. Nate explains that he's a food mover and provides high-end products. He wants to move truffles and says that he has a new non-French source. When Nate leaves, Lampard goes after him.
At the restaurant, Eliot tries to teach Parker how to appreciate food as art but she doesn't quite grasp the idea.
Lampard follows Nate to a field designed to match one in France, complete with the same climate. Sophie owns the land and is harvesting truffles, and Lampard is impressed that they've managed to recreate French truffles in Oregon. Sophie insists that she supports open-source food but Nate asks her to let him have a word with Lampard. Once she leaves, Nate explains that Sophie has 16,000 acres of truffles and Lampard offers him $5,000 for twenty pounds. Nate haggles for $2,000 a pound and Lampard agrees to pay it.
Back at the restaurant, Toby gets them fifteen pounds of truffles from the local chefs, all he could get on short notice. They plan to track the truffles and see where Lampard takes them to the rest of his stash. Alec has the institute wired so they can follow Lampard anywhere. Nate meets with Lampard and Rampone in a parking garage and they prepare to make the change, but Lampard notices there's only fifteen pounds. However, he takes it anyway and invites Nate to dinner at his restaurant to try one of their signature black truffle dishes for his opening night, and Nate agrees to bring Sophie along.
When Nate gets back to base, they watch on the monitor as Rampone and Lampard open a secret hidden refrigerator. Nate plans to go in and get it during the opening night, using the commotion as a distraction. They need a food critic and Eliot suggests that Parker can do it. She doesn't think she can but Eliot tells her to remember what they've talked about. Alec sets her up as a mystery food critic while Nate tells Alec that he'll have to open the safe because the rest of the team is occupied. They hear a commotion outside in the restaurant and discover that one of Sophie's acting students, Zachary, is rehearsing a scene with another of Sophie's students while Sophie looks on.
On the night of the opening, Eliot assigns all of the students to work and sidelines Alec so he can get to the safe. Meanwhile, Lampard tells Rampone to keep an eye out for Parker and then greets Nate and Sophie. Rampone spots her based on the one sketch they have and the rumor that she has a crescent-shaped birthmark on her left wrist. Lampard insists on serving her personally and Parker shoos him away. Nate figures that everything will go fine as long as there are no unforeseen circumstances. Outside, Jean-Luc arrives and, angry that Lampard is cutting him out, tells his henchman Patrice to kidnap Eliot.
Lampard continues serving Parker and Sophie coaches her in micro-expressions. Parker goes a bit overboard and Sophie admits that she has to have something to connect with. She tells Parker to think of things that inspire and things that make her throw up and things go better.
In the kitchen, Patrice comes in and asks Eliot to come with him. Eliot knocks him out with a couple of blows and tells the students to focus. Jean-Luc soon notices that Patrice hasn't come back and sends Samir to get Eliot. Meanwhile, Nate tells Alec to head for the safe but he discovers that Rampone is standing guard. Nate tells Parker to get Alec inside without tipping off Lampard, and she starts dictating as cover to give Alec direction for an alternate route in.
Eliot disposes of Samir and follows up on Parker's suggestions, adding bone marrow to his dishes. Meanwhile, Alec crawls through the food shelves to get to the hidden safe. Parker starts to "get" the food and feel something.
Jean-Luc sends Thierry in when there's no sign of Eliot, Samir, and Patrice. Thierry reluctantly goes in.
Alec breaks into the freezer safe using liquid nitrogen, while Parker enjoys Eliot's dish and waves to Lampard that everything is fine. Thierry enters the kitchen and Eliot asks him to sample the sauce. He then knocks the thug out and compliments one of the students on her cooking.
As Alec takes the money, Rampone attacks him and Alec bites him and runs. Rampone chases after him, and Nate tells Sophie to go to work. She tells everyone in the restaurant to give Lampard a round of applause for his work. She encourages everyone to hug everyone else, and all of her students in the restaurant participate. Rampone runs out after Alec but one of the students distracts him lone enough for Alec to get away. Lampard realizes that something is wrong and runs to the safe.
Jean-Luc realizes something is going on and drives away.
Rampone goes to the kitchen and recognizes Eliot from his mercenary days. Eliot orders the students out and tells Rampone that he hurt Toby and now he's going to pay. They go for their knives and fight it out in the kitchen, and Eliot defeats him. He holds a knife to Rampone's throat, and Nate comes in and tells him to leave Rampone to the cops. Rampone begs Nate to call Eliot off and the hitter finally backs off. Rampone throws a punch and Eliot catches it and Nate punches him out.
At the airport, Lampard is trying to board when government agents Palmer and Snead call him over and say they need to search his bags. They find truffles and Lampard says that he's taking them back to France. They explain that there with U.S. Fish & Wildlife and Lampard is in violation of laws against illegally shipping plants and fungus. As Lampard gets tased, he looks up and sees the team watching him.
Back at the restaurant, Eliot and Nate give Toby his money. He thanks them for restoring his reputation and Eliot assures him that he'll stay in business as long as they're around. The same deliveryman from earlier arrives with a laser for Alec, who plans to use it for their new menu. Eliot doesn't want the laser anywhere near his kitchen, and the deliveryman would rather have his tip. Alec gives him a few coins and figures that Parker would understand if she was there. When Eliot wonders where Parker is, Nate tells him that she's on a little trip.
Parker breaks into a museum and admires a statue.
