Along the way he'll sample alligator, see an alligator farm, suck out crawfish, enjoy some top notch bread pudding and find some andouille sausage. He'll also answer the question, "What, exactly, is head cheese?"

The episode title comes from a T.S. Eliot line, from his 1941 work "The Dry Salvages." Eliot famously described the Mississippi River as a "strong brown god"; the title is apropos since this episode begins a trip from the southernmost road-accessible point on that great river north through and past New Orleans.
