In New South Wales, it's the Bellingen Rural Show, and like all good agricultural shows there are perfect specimens aplenty. Bill talks the principals of good country baking, and joins in the fun by entering his sponge cake in a cake baking competition. Make no mistake, at the Bellingen show, there is stiff competition, even tougher judges, and a city slicker gets no slack! After the excitement of the Show, Bill takes a serene trip to the Hawkesbury River, where oysters and squid abound and market gardens and small farms grow crops that feed Sydney only 45 minutes away. Homes accessible only by boat nestle down near the waters edge with their very own private beaches and picnic spots, and secret vistas that sweep you away. It is here that Bill cooks a family feast inspired by Spain.
