Adam is in his hometown, discovering all new off the menu dishes. First up, Adam searches for a hidden steakhouse that serves an off menu veal chop special. But he better hurry, because they only prepare five of these decadent chops a night. Adam finds this "steak-easy" experience at Tre Dici Steak in Chelsea, where Executive Chef Giuseppe Fanelli gives him an inside look into the making of the night's featured secret special, the Inside Out Veal Chop Valdostana. Giuseppe starts by pan searing the veal and then deglazes the pan with Marsala wine, a red wine and veal stock demi-glace to create a sauce.
